Description and Purpose:

The purpose of the assignment is for students to apply the concepts learned in class to design an evidence-based nutrition education program for the assigned, target population.

 

Scenario:[1] You are a nutrition consultant group hired by the NYC Health Department to design a nutrition education program to be implemented at a community setting, serving an urban, ethnically diverse population in Flatbush/Midwood as follows*:

*Note: As you begin doing your research, you are highly encouraged to narrow down your focus. This can be by gender, rate/ethnicity, of further narrowing down by age (especially for groups 3 and 4).

 

The program is scheduled to last 7 weeks, with one lesson per week, lasting approximately 45 minutes. In this assignment, you will use literature and secondary, community data to develop topics and objectives for the lessons, addressing ALL three levels of intervention in communities:

  • Level 1: Build awareness (i.e. increasing awareness about a particular diet-related health outcome)
  • Level 2: Change lifestyle (i.e. providing needed motivation and skills for individuals to engage in healthy lifestyles)
  • Level 3: Create a supportive environment (i.e. providing tools for individuals to make positive changes to their environment, to promote desired dietary behaviors. For example, food shopping and/or storing tips)

 

Procedure:

The assignment will be developed throughout the second half of the semester, allowing you to apply the lecture concepts through guided online activities. The activities listed below will count toward your class participation grade, while also allowing you to receive feedback and apply the concepts learned by providing feedback to fellow classmates.

 

Step 1: Identify relevant information. Research the peer review literature and available NYC data to characterize the neighborhood and health situation of the target community.

Step 2: Make a list of priorities to address in your program. Using your knowledge of the neighborhood and the population, make an initial list of priorities for your nutrition education program.

Step 3: Begin planning your program. This step involves the following activities:

  1. Determine the topics for each of your four lessons, including determining the main goal for each lesson,
  2. Create a name for your program,
  3. Determine the location for your program
  4. If not specified for your group, determine the location. Potential locations include school settings, local universities, workplace settings, community centers and institutions (libraries, YMCAs, etc), community gardens, religious institutions, etc. The location is important as it will guide the activities your are able to do. You are strongly encouraged to select a real location within the neighborhood selected, as this can make your work easier (leaving less to the imagination).
  5. Based on the goal for each session, develop objectives for each lesson. These are based on those developed for Step 2, where you motivate needed changes in knowledge, skills, and behavior to reach the desired health outcome. For example, if you have a lesson that focuses on hydration, you may include an objective aimed at creating awareness about fluid intake (knowledge), how to monitor fluid intake (skill), and the desired fluid intake change (behavior).

Step 4: Select one lesson and develop into a full lesson outline. Using the template provided and incorporating feedback received, insert the objectives developed in Step 3 (part 3). Then indicate the time (duration, in minutes), the related activity, and the materials needed to accomplish it. For each activity, indicate which level of intervention you are addressing.

Step 5: Develop an evaluation plan for your program. Using the program outcomes developed for Step 2, develop a simple evaluation plan to assess whether these outcomes have been met.

Term Paper Formatting and Guidelines.

NOTE: This term paper is not a traditional essay. It is designed for you to use different formatting requirements, and appropriate headlines. Your document must include the following sections AND include the section titles. Suggested page lengths included for guidance, for you to meet the required 5-page limit.

 

(1)    Needs assessment and justification [~1 page]:
Review the main findings from your needs assessment and program review (from the peer reviewed literature), including nutrition-related behaviors and issues of concern in the selected neighborhood that justify the need for this nutrition education intervention. This section needs to include in-text citations, to back up your statements, and should be written in paragraph format.

(2)    Program goal and Outcome Objectives [~1/2 page]:
This section will state the program goal and the outcome objectives. The objectives should include short-term, intermediate and long-term outcomes, or the desired knowledge, attitude and behavior changes as a result of intervention, and long-term health outcomes. Each objective should be stated using bullet points, denoting one change per bullet. You may organize the objectives in a table format (single-spaced), as follows:

This section must demonstrate your understanding in regards to the behavior change process as a result of your program. Avoid using specific dates in your statements to denote the time of expected change. It is clearer to describe the change in relation to the program duration.

 

(3)    Program overview [~1 page]:
Describe the overall nutrition education intervention, including the duration, number of participants and their desired characteristics (age, gender, ethnicity, health condition, if applicable), and the place where the classes will be held. Include a list of the lessons using bullet points, and a short description of how the lessons build knowledge to achieve the program objectives. This section should include references to denote if material from other programs was used, or “inspire” the current program.

(4)    Detailed lesson [~1 page]: Provide a brief introduction (paragraph form) to the selected lesson. Then provide a detailed view of a day’s lesson, including all the required elements: lesson learning objectives, materials needed, and activities (including estimated time allowance for each). The lesson activities should be presented in a table format, with single spaced font.

(5)    Evaluation Plan [1/2 page]: Describe the overall evaluation plan for the nutrition education intervention. This section should include how you plan to assess whether the outcome objectives of the program were achieved. The section should detail the tools you will use and a brief description (That is, don’t just note that “we’ll do a survey”, but also what the survey will assess and when it will be administered).

5 pages (MAXIMUM), double-spaced (except tables, as described above), not including references, using 11-12-point font (Times New Roman). Please note:

  • The writing should be revised for grammar, spelling and coherent organization.
